Apple pies baked in apples!
who said healthy can't be fun?
I made these over the weekend, with half the sugar and they were SO GOOD! the kids loved them too!
they are a healthier alternative to traditional apple pie, and you can control how much sugar gets baked into these goodies.
have your kids help you by washing, measuring, and adding ingredients!
~APPLE PIE BAKED IN APPLE~
5-6 Granny Smith apples (make sure they can stand on their own)
1 tbsp. cinnamon
1/4 cup sugar
1 tbsp. brown sugar
... pie crust (homemade or pre-made)
1) Preheat oven to 375F.
2) Cut off the top of 4 apples off and discard. Remove the inside of each apple with a spoon or melon baller very carefully, as to not puncture the peel.
(you can keep what you scooped out for filling, or chop up new apples and use them as filling)
3) Remove skin from remaining apple(s) and slice very thinly. These apple pieces will give you the additional filling needed to fill the four apples you are baking.
Mix sliced apples with sugars and cinnamon in a bowl. If you prefer more or less cinnamon make adjustments as desired. Same goes for the sugar.
Scoop sliced apples into hollow apples.
4) Roll out pie crust and slice into 1/4 inch strips. You can also add a strip of pastry inside the top of the apple almost like a liner to add a little more texture/sweetness to the pie. (you can skip the pie crust for an EXTRA light version)
Cover the top of the apple in a lattice pattern with pie crust strips.
5) Place apples in an 8×8 pan. Add just enough water to the cover the bottom of the pan.
Cover with foil and bake for 20-25 minutes.
Remove foil and bake for an additional 20 minutes or until crust is golden brown and sliced apples are soft.
Makes 4 baked apple pies (in the apple).

Sliced or diced mangos
Yogurt or Milk
1/2 a cup of orange juice
Ice
Blender
Directions:
1. dice mangoes (if they have not been pre-cut)
2. add all ingredients to blender
3. puree until smooth, serve, and enjoy!

Are you looking for a healthy, nutritious Mothers' Day recipe? Well then here it is: Smoked Salmon Salad!
Materials Needed:
1. 8 cups (2 L) torn leaf lettuce
2. 2 green onions, sliced
3. 2 tbsp (30 mL) drained capers
4. 2 tbsp (30 mL) vegetable oil
5. 1 tsp (5 mL) grated lemon rind
6. 1 tbsp (15 mL) lemon juice
7. 1 tbsp (15 mL) liquid honey
8. 1 tbsp (15 mL) Dijon mustard
9. 1 tbsp (15 mL) white wine vinegar
10. 1/4 tsp (1 mL) each salt and pepper
11. 3 oz (85 g) thinly sliced smoked salmon
12. Knive
13. 4 Forks
14. 4 Plates
15. 2 Bowls
16. Whisk
Recipe
Dressing: In bowl, whisk together oil, lemon rind and juice, honey, mustard, vinegar, salt and pepper. Mince half of the smoked salmon; add to dressing.
In salad bowl, toss together lettuce, onions and dressing until coated. Divide among plates.
Cut remaining salmon into strips; curl into rosettes and arrange on salad. Sprinkle capers over top.
Servings: 4
